Tastes of Texas: Kansas City Ribs Edition - Live Photo Blog

In typical Texan fashion we do another region's style of BBQ better.

I thought the last live blog went exceptionally well, and I've been looking for an opportunity to do it again. My original plan was to smoke a brisket today to illustrate some of the points I mentioned in my first post, but had a last minute change of heart. We're playing Kansas today, and those folks up in Kansas City, just down the road from Lawrence, sure do think they've got this rib thing all figured out. I decided it's time to step out of my comfort zone and take on a new style of BBQ.

That said, my goal today is to add a Texas touch on the Kansas City style. See, I''ve never been a huge fan of KC BBQ because I've always thought it's entirely too sweet, so today I'm attempting to back off that sweetness a bit and add a balance of spiciness. West Texas Mesquite and Spices + KC Sweet and Savory? We should be in for a hell of a ride.

Even if the basketball team loses, we'll all win. As always, bring your own methods and thoughts to the table. The discussion is what makes this fun.
